Hand Hospitality replaced its kaiseki restaurant Towa with a walk-in ramen counter serving Nagahama-style bowls under ten dollars, open until 2 a.m.

Hand Hospitality runs some of the most ambitious Korean and Japanese kitchens in the city, and here they have deliberately built the opposite: one broth, thin fast-cooking Nagahama noodles, QR ordering, no reservations, in the room that until July held their kaiseki restaurant Towa. The style was invented to feed Fukuoka fish market workers quickly. That is exactly the point.

What to expect

A short menu — original ramen, spicy ramen for a dollar more, chicken karaage, and add-on toppings. Walk-in seating only, ordering by QR code, and a room designed for turnover rather than lingering. Open every day from late morning until two in the morning at 36 West 26th Street.
