Rice is usually the thing you stop noticing on a Thai menu, and Hommali is a whole restaurant built to make you notice it. Three friends from Bangkok, two of them Eleven Madison Park alumni, open on September 2 with a kitchen that dry-ages its own beef and grinds its own curry pastes from a rotating cast of Thai chiles. Labor Day weekend is your first real chance at a table, and both bookings and walk-ins are open.
What to expect
The kitchen's northern-style larb is made as a tartare of dry-aged beef heart with a cured, cooked and fried tripe cracker, and other dishes include a tom yum seafood cocktail, dry-aged duck breast with fermented chile sauce, and penang curry with beef cheeks. - Dinner only, Wednesday to Sunday, 5 p.m. to 10 p.m. Closed Monday and Tuesday.
- Reservations are recommended and open on Resy for September 4, 5 and 6, but walk-ins are welcome.
- Tables are timed: the restaurant asks parties of two to keep to 1.45 hours.
- White jasmine rice is complimentary with every meal - that is the whole point of the place.

Hom mali is Thailand's national jasmine rice. One of the owners notes it can also mean kissing on the cheek in Thai.
