Two of the most decorated pitmasters in Texas have finally planted a flag in New York, and Labor Day weekend is when Kirbee's swings both its windows fully open. Chuck Charnichart of Barbs B Q and Jonny White of Goldee's cook side by side here, each sending out a plate that argues for a different corner of the state. Greenpoint has never had a line quite like this.
What to expect
You queue on the sidewalk, order at the first window, watch the meat get sliced and trayed inside, then collect it at a second window and find one of 24 seats. Charnichart's plate leans South Texan and Mexican, with lime-zested pork ribs, brisket seasoned with Mexican spices, charro beans and her green spaghetti; White's runs modern Central Texan, with brisket, ribs, turkey, potato salad and coleslaw. - This is a daytime spot. Its August 30 first day runs 11 a.m. to 2 p.m., the way Texas barbecue joints serve lunch.
